Nasi Minyak Terengganu

pictures and recipe is borrowed from another blog.
in case you have an original recipe (authentic) of "Beef Masak Hitam", please share it with me, my visitors and our kitchen.

Ingredients :

4 cups Basmathi rice ~ washed and put through a strainer

To saute :

Star anise (bunga lawang)
Cinnamon stick (kulit kayu manis)
Cardamon (buah pelaga)
Cloves (bunga cengkih)
3 shallots ~ sliced
2 cloves garlic ~ sliced
3 tablespoons ghee
1 tablespoon margarine

1/2 can evaporated milk
3 1/2 cups water
cashew nuts
1 screwpine leaf (daun pandan)
food coloring : red, green and yellow
salt to taste

Method 1 :

1. Heat a pot and add in the ghee and margarine.
2. Add in the star anise, cinnamon stick, cardamon, cloves, shallots and garlic. Fry till fragrant.
3. Add in water, evaporated milk, salt and screwpine leaf. Stir well.
4. Add in the Basmathi rice and leave to cook.
5. When almost ready, put a few drops of coloring on three parts of the rice. Do not stir.
6. Leave it for a while, then stir to mix.
7. Sprinkle the cashew nuts and cover to cook.

Method 2:

1. Place rice, screwpine leaf and enough water (slightly less that what's needed to cook rice) in a pot and cook on the stove.
2. Meanwhile, in a small wok, melt margarine and ghee.
3. Add in the star anise, cinnamon stick, cardamon, cloves, shallots and garlic. Fry till fragrant.
4. Add in evaporated milk, a bit of water and salt. Stir well.
5. Pour into the half-boiling rice and stir well.
6. When almost ready, put a few drops of coloring on three parts of the rice. Do not stir.
7. Leave it for a while, then stir to mix.
8. Sprinkle the cashew nuts and cover to cook.

No wonder so much cyber traffic, you have such beautiful pictures and nice stories. I wish I was just around the corner to go there. Just comment on my blog whenever you have time. I just love to read. We don't want blogging fun to turn into a hassle. Blessing

If you want to taste these food, The Malaysian Hall in London might have them, especially during festive seasons...

Writing comments is not such a hassle but... but.. but... the tag took me a while to! The hardest part was the "next 6 bloggers to choose". The less hard part was waiting for pictures to upload. BUT mind you? I took two days thinking which happy events to share since each day is always filled with happiness.

I was mistaken you for Barbara from East London... thus the mentioning of Malaysian Hall in London ... for food testing and tasting... LOL!

Too much blogging... hahahahha and mistaken identity!

Waalaikumussalam Afiq,

Alhamdulillah syukur, exam dah over. Mudah2an berjaya dengan cemerlang.

Here's a resipi..copy dari blog ni. selamat mencuba.

* 1 kg daging
* 4 ulas bawang merah
* 3 ulas bawang putih
* 1 1/2 - 2 sudu makan cili giling
* 3-4 sudu makan rempah kurma
* 2-3 biji kentang
* 1 biji kelapa
* 1 biji cili merah
* 1 biji cili hijau
* 1-2 biji buah tomato
* 1-2 ulas asam keping
* garam secukup rasa

1. Daging dipotong kepada ketulan-ketulan sederhana besar...Bawang merah dan bawang putih ditumbuk kasar...Rempah kurma dan cili giling dibancuh bersama sedikit air...Kentang dipotong enam...Tomato dibelah empat...Sediakan santan daripada sebiji kelapa...
4. Masukkan kentang dan tutupkan kembali kuali atau periuk...Apabila kentang agak-agak empuk, masukkan cili merah,cili hijau dan asam keping...Akhir sekali, masukkan santan dan buah tomato..
5. Biarkan mendidih selama 5 - 10 minit...Bubuh garam secukup rasa...Sedia untuk dihidangkan.
